St. Martin's Day Goose Feast | Apátsági Rege Pastry Shop

According to legend, Saint Martin hid among the geese when they were about to elect him as their bishop. However, the birds gave him away with their loud cackling—and that is how the goose became a permanent fixture in the St. Martin’s Day tradition.

In the past, this period marked the end of the fall harvest, tasting the new wine, and communal feasts. This year at Apátsági Rege Pastry Shop, four completely different dishes continue to tell this story: featuring classic ingredients, rich fall flavors, and a few unexpected pairings.

• 🍲Goose soup with goose liver
• 🍕 Márton Pizza – smoked cheese, confit goose meat, caramelized onions, and rosemary plum ragout on a sour cream base.
• 🪿Rege-Style Goose Stew – silky goose stew with fall vegetables and grilled goose liver, topped with crispy goose cracklings.
• 🍰 Goose Leg Cake
