AWESOME Dishes | Echo Restaurant & Cafe

In the fall, pumpkin pops up almost everywhere, yet it’s often used only in soups or as a decoration. We were curious to see how they could be used throughout an entire lunch or dinner so that each plate shows a completely different side of it along the way.

Over the long weekend, a three-course meal will be served at Echo. There will be creamy, savory, spicy, mushroom-based, and finally sweet options—and the oven will never take a back seat.

• 🥣Pumpkin Cream Soup — this silky soup is topped with toasted pumpkin seeds and served with a ginger pumpkin salad. Creamy, crunchy, and fresh elements come together right from the first course.
• 🍄Roasted pumpkin risotto—prepared with grilled goat cheese and sautéed chanterelle mushrooms. The risotto’s lightness is perfectly complemented by the distinctive cheese and the deep, autumnal flavor of the mushrooms.
• 🥧 Pumpkin-Poppy Seed Pie – a sweet finale to the menu, combining the delicate sweetness of the pumpkin with the familiar character of poppy seeds in every slice.
