In Roman times, November 11 was the first day of winter, when a great feast was held with the new harvest and new wine. 

Generally, they consumed the sacred bird of Mars, the god of war, which in Latin is called avis Martis (the bird of Mars). This became "Márton's bird" in popular usage.

In Hungary, St. Martin's Day customs are partly related to the end of the year and the completion of agricultural work, and the approach of Advent, and partly to the legend that St. Martin tried to hide in a goose pen when he wanted to be elected bishop , but the geese betrayed him with their honking.
